Executive Chef – Andrea De Matteis

Your chance to cook in the Santini’s Ristorante Kitchen and learn from our executive chef! A stimulating environment of learning and laughter where we teach you and your friends the traditional taste of Italian cooking.

Andrea grew up in Varese, Italy in a culinary family. His mother was an excellent cook and the house was constantly filled with delicious and tantilising aromas. Andrea inherited his mother’s love for food, and pursued a career as a professional chef.

He attended culinary school in Varese where he passed with honours. He then worked his way up from a kitchen helper to a line cook, and after graduation he moved to the United Kingdom, where he opened his very first bistro in Glasgow, Scotland. His endeavour was so successful he opened an additional Italian restaurant and another fast food bistro. He later sold these successful businesses and returned to Italy, where he opened a restaurant and pizzeria. However the travel bug hit Andrea once more and he decided to move with his family to Toronto to start a new life in Canada.

After just a short time in Toronto Andrea became the Executive Chef at the popular Trattoria Nervosa, a well known Italian restaurant with as many as 600-700 covers a day and an annual income of over a million dollars.

In 2013 Andrea decided to follow an opportunity outside of Toronto. He moved to Collingwood to begin working on the Santini’s concept which now includes Santini’s Ristorante (fine dining), Santini’s – the Good Chef (bistro) and Santini’s Bistro (Sault Saint Marie).

Due to Andrea’s incredible skill as both a chef and restaurateur, Santini’s won Chamber of Commerce Restaurant of the Year Award and New Business of the Year Award in 2014.


Pastry/Baker/Patissie Chef – Gordon Sellen

Also enquire about a special cooking class from our award winning Pastry Chef, Gordon Sellen. Gordon is a Gold Seal Certified Baker/Patissier with over 25 years of experience. Working as an Executive Pastry Chef for much of his career, Gordon has  won several gold and silver medals at international competitions mainly for his work in blown and pulled sugar showpieces, as well as chocolate design. Not only is Gordon a talented chef, he is also an accomplished artist working in both glass blowing as well as painting.
Gordon brings his creative skill, artistry and passion for baking to Santini’s where he creates masterful desserts and pastries you won’t want to miss.


Group Classes

Maximum of 4-6 people per class
Class runs from 10.30am to 12.30pm (2.5 hours)
The menu is a 3 courses (starter, main course and dessert)
Cost: $70 + taxes per person

A custom menu will be created depending on cooking class attendee’s preferences.

Class includes:

  • 1 x complimentary Santini’s apron (per person)
  • Recipes to take home of the meal
  • At the end of the class – you will dine on the delicious meal you just cooked. Please allow extra time for this
  • A complimentary glass of house wine with your meal

Private/Personalized Class

2 people (this number is flexible)
Dishes cooked will be established when booking class based on your preferences (favorite Italian dishes)
Date and time/cost to be discussed when booking class

Class includes:

Information you should know before attending a class

  • Please arrive around 15 minutes before your class time or earlier to get yourself settled in and to ensure that the class starts on time
  • We are not a nut-free environment
  • For your safety, closed-toe shoes are required footwear
  • Please refrain from wearing strong perfumes or cologne as a courtesy to others in the class – smell is an integral part of the tasting process, and we want all of our students to enjoy the flavours and aromas created by the food they create!
  • Please set your cell phone to vibrate, or turn it off during the class.  If you do need to take a call, please step out of the kitchen so that the others in the class can listen to any important instructions or directions
  • Metered car parking is available on Hurontario Street or at the rear of Santini’s Ristorante.  Ask for details!

Cancellations and privacy policy

By signing up for the course, you agree to the following terms and conditions:

Registration

  • During your registration please inform us of any allergies or food restrictions – including whether or not an EpiPen is carried.
  • Classes are non-refundable.
  • Classes may be cancelled if there are an insufficient number of registrants.  We reserve the right to alter the class menu or instructor if necessary.

Cancellation

Students can withdraw from their scheduled class up to 48 hours in advance, and a credit for the amount will be issued in the form of a gift card or to amount can be transferred towards another class.  There is maximum of 2 class cancellations within the 3 months, after that the credit will be forfeited.
Under 48 hours notice, the student will not be able to cancel, but may:
  • Send a substitute in their place
  • Be charged 100% of the class fee

FAILURE TO ATTEND A CLASS

If a student fails to show for the class, no credit is offered, and there are no make-up classes. 
CLASS CONFIRMATIONS
Students are responsible for remembering their scheduled class date and time.  If you would like to verify your spot or any of your registration information in a particular class,
